Dehydrated Onion is India's largest dehydrated vegetable export. Available in multiple forms — white flakes (3–5mm), minced (1–3mm), granules (0.5–1mm), powder (60–80 mesh) and kibbled/toasted variants. Moisture content is maintained at maximum 5% for flakes and 4% for powder. The primary growing and processing region is Mahuva, Gujarat, which produces the benchmark quality for global buyers. India exports dehydrated onion to over 80 countries with the USA, Germany, Japan, Malaysia and Australia as the top destinations.

Dehydrated Garlic is India's second most important dehydrated export. Available as flakes, minced, granules (8–16 mesh, 16–26 mesh, 26–40 mesh) and powder. High allicin content is a key quality parameter — buyers specify minimum allicin yield of 3,000–4,500 ppm for premium grades. The primary production regions are Gujarat and Madhya Pradesh. Dehydrated Ginger is available as slices, kibbled, granules and spray-dried powder. Gingerol content (the active pungent compound) is the key quality metric — minimum 15mg/g for good quality ginger powder. Moisture maximum 8%. Organic certified dehydrated ginger is available from Rajasthan and Himachal Pradesh origin.

Dehydrated Tomato Powder is produced by spray-drying tomato paste or drum-drying sliced tomatoes. Brix 4–6% for spray dried, lycopene-rich and used in soups, sauces, seasonings and snack seasonings. Moisture maximum 4%. FSSC 22000 certified.

Quality Standards and Certifications

FSSC 22000 is the primary food safety certification for dehydrated product processing facilities in India. It is recognised by the Global Food Safety Initiative (GFSI) and accepted by major retailers and food manufacturers globally including Tesco, Walmart, Nestlé and Unilever supply chains. Always verify that your supplier holds a current FSSC 22000 certificate covering dehydrated vegetable processing — not just storage or trading.

FSSAI (Food Safety and Standards Authority of India) — all Indian food processing facilities must hold a valid FSSAI manufacturing licence. This is the Indian government food safety authority equivalent to FDA (USA) or EFSA (EU).

Halal and Kosher certifications are available from all major Indian dehydrated product exporters, covering both the product and the processing facility. Required for supply into Middle Eastern markets and for Jewish and Muslim food segments in Western markets.

US FDA Registration — facilities exporting to the USA must be registered with the US FDA under the Bioterrorism Act. Verify FDA registration number before placing orders for US-bound shipments.

EU Food Safety Requirements for Dehydrated Products

The European Union applies strict food safety requirements to dehydrated products. Pesticide residue testing against EU MRL (Maximum Residue Limits) per EC Regulation 396/2005 is mandatory. Microbiological testing must confirm absence of Salmonella (in 25g), E. coli below 10 CFU/g, and total plate count within specification. Ethylene Oxide (ETO) — used historically as a fumigant — is banned in the EU with MRL of 0.02 mg/kg. Any dehydrated product treated with ETO will be rejected at EU ports. Ensure your supplier uses approved fumigation methods (phosphine or heat treatment) for EU-bound shipments.

Standard Packaging Options

Dehydrated products are highly hygroscopic — they absorb moisture readily from the environment and must be packed in moisture-barrier packaging. Standard export packaging options include:

  • Carton pack: 10kg or 20kg inner poly bag inside cardboard carton — standard for most industrial buyers
  • Drum pack: 20–25kg fibre drums with hermetic lid and inner poly bag — preferred for powder grades
  • Bulk bag (FIBC): 500kg or 1000kg for large industrial users — with inner liner
  • Retail/food service: 1kg, 2kg, 5kg pouches with custom private label — Ziploc or aluminium foil laminate

All packaging for EU markets must comply with EU food contact materials regulation EC 1935/2004 and include full ingredient declarations, best before date and allergen information per EU FIC Regulation 1169/2011.

Shelf Life and Storage

Properly packaged dehydrated products have a shelf life of 18–24 months from date of manufacture when stored at ambient temperature below 25°C and relative humidity below 65%. Garlic powder and onion powder are more sensitive to moisture than flakes and should be prioritised for climate-controlled storage at destination. Cold chain is not required for dehydrated products under correct packaging conditions.
