India's Chilli Export Position
India is the world's largest producer, consumer and exporter of dried chillies, accounting for approximately 25% of global production. Andhra Pradesh's Guntur district is the world's largest chilli trading hub — the Guntur chilli market handles millions of tonnes annually and sets global price benchmarks for both heat-value and colour-value chillies.
Two varieties dominate Indian chilli exports: Teja (S17) — the high-heat Guntur variety with ASTA colour 80–120 and very high capsaicin content, used where heat intensity is required; and Byadagi — Karnataka's low-heat, deep red colour chilli with ASTA colour 120–160+, used specifically for its paprika-like colour contribution in food colouring and processed food applications.
ASTA Colour and Capsaicin
ASTA (American Spice Trade Association) colour units measure colour intensity — higher ASTA means deeper, more vibrant red colour. Byadagi chilli's 120–160+ ASTA makes it valuable in food manufacturing for natural red colouring. Capsaicin content determines heat level measured in Scoville Heat Units (SHU). Teja chilli: 100,000–150,000 SHU. Byadagi: 10,000–20,000 SHU.
