India's Tomato Processing Industry
India produces over 20 million tonnes of tomatoes annually, making it the world's second largest producer. Processing Methods and Grades
Spray Dried Tomato Powder — The most widely exported grade. Tomato paste is atomised into a hot air chamber, producing a fine, free-flowing powder with low moisture (3–5%), excellent solubility and long shelf life (18–24 months). Used in soups, sauces, seasonings, instant noodles, snack coatings and ready-to-eat meal mixes.
Drum Dried Tomato Powder — Thicker flakes with a more intense, cooked flavour profile. Slightly higher moisture (5–7%). Used in soup mixes, stew bases and industrial seasoning blends where a more concentrated tomato flavour is required.
Both grades are available with no added salt, with salt (sodium chloride added as anti-caking agent) or with silicon dioxide as anti-caking agent.
Applications
Food Manufacturing — Soups and soup mixes, pasta sauces, pizza toppings, ketchup base, barbecue sauce, salad dressings and marinades. Spray dried tomato powder reconstitutes easily in water to produce consistent tomato flavour without seasonal price variation.
Seasoning and Spice Blends — Dry seasoning mixes for crisps, popcorn, snack foods, noodle seasoning sachets and instant meal kits. Tomato powder is a key ingredient in many global seasoning blends.
Institutional and HoReCa — Caterers, hotels and restaurant chains use tomato powder as a consistent, shelf-stable ingredient for high-volume sauce and soup preparation.
