White onion is milder and creamy-coloured, use it where colour neutrality matters such as white sauces, soups and mayonnaise. Pink or red onion is more pungent with a warm tan tone, better for savoury blends, snack seasoning and chutneys. Both are processed to identical food safety and moisture standards.
Particle size. Flakes are 5 to 15mm for visible-onion applications, chopped is 5 to 10mm for ready meals, minced is 3 to 5mm for sauces, granules are 0.5 to 1mm for dry blends, and powder is 80 to 100 mesh for food manufacturing where full dispersion is needed.

Dehydrated onion in all forms is exported from India under HS Code 0712.20, which specifically covers dried onions. This is distinct from dehydrated garlic, which falls under 0712.90. Declaring the wrong code causes customs delays.
