India's Ginger Production Heritage
India is the world's second-largest ginger producer after China, with Kerala as the primary growing state for high-quality fresh ginger. Additional production in Himachal Pradesh, Assam and Rajasthan (organic certified) contributes to dehydrated ginger supply. Indian ginger is characterised by its high gingerol content — the principal bioactive compound responsible for pungency, anti-nausea and anti-inflammatory properties.
Global demand for dehydrated ginger has grown significantly driven by herbal tea products (ginger tea is the world's largest herbal tea segment), functional food and beverage applications, nutraceutical supplements and pharmaceutical formulations.
