Jaggery (Gur) is an unrefined natural sweetener produced by evaporating fresh sugarcane juice or palm sap without any chemical processing. India produces approximately 70% of the world's Jaggery with Maharashtra (Kolhapur), Karnataka (Mandya), Uttar Pradesh and Andhra Pradesh as primary producing states.
Unlike refined sugar which strips all nutrients, Jaggery retains significant quantities of iron (11mg/100g), magnesium, potassium, phosphorus and antioxidant polyphenols from the original cane juice. This nutritional profile drives strong demand from health food brands in Europe, USA and Japan where Jaggery is positioned as a 'clean label' alternative to refined sugar.
Product Forms
Block Jaggery (Gur) — Traditional compressed blocks of 250g, 500g, 1kg. Golden yellow (light Jaggery) or dark brown (dark Jaggery with higher mineral content). Primary form for food service, retail and manufacturing use.
Jaggery Powder — Free-flowing powder, max 3% moisture. For bakery, confectionery and health food formulations requiring easy incorporation.
Liquid Jaggery — Syrup form (70°Brix). For beverage manufacturing and liquid seasoning applications.
